✨ Sattu Litti Chokha – The Soulful Taste of Bihar

🥣 Ingredients
For the Dough (Litti):
- 2 cups whole wheat flour
- 2 tbsp ghee or oil
- A pinch of salt
- Water to knead
For the Sattu Filling:
- 1 cup Sarvada Sattu
- 1 small onion, finely chopped
- 4–5 garlic cloves, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 1 tbsp mustard oil
- 1 tsp carom seeds (ajwain)
- Salt to taste
- 1 tsp lemon juice or amchur
- Fresh coriander leaves, chopped
For the Chokha:
- 1 large eggplant
- 2 tomatoes
- 2 boiled potatoes
- 1 onion, finely chopped
- 4–5 garlic cloves (raw), crushed
- 1 tbsp mustard oil
- Salt, green chili, lemon juice to taste
- Fresh coriander, chopped
🔥 Instructions
1️⃣ Prepare the Dough
- Mix wheat flour, salt, and ghee in a bowl.
- Gradually add water and knead into a soft, pliable dough. Let it rest for 20 minutes.
2️⃣ Make the Sattu Filling
- In a separate bowl, combine all filling ingredients.
- Add just a splash of water to help bind the mixture. It should remain dry and crumbly.
3️⃣ Shape and Stuff the Litti
- Divide dough into balls.
- Flatten, stuff with the Sattu mix, and seal carefully.
- Gently roll into smooth stuffed balls.
4️⃣ Cook the Litti
- Traditionally roasted over coal/fire for a smoky taste.
- Alternatively, bake at 200°C (392°F) for 25–30 minutes, flipping halfway.
- Once done, dip in hot ghee.
5️⃣ Prepare the Chokha
- Roast eggplant and tomatoes directly over flame until charred and soft.
- Peel and mash along with boiled potatoes.
- Mix in onion, garlic, mustard oil, lemon juice, salt, and green chilies.
